Oatmeal Banana Spice Cake

This cake is so delicious and a definite crowd pleaser, so keep it in mind this upcoming holiday season with parties aplenty!


Oatmeal Banana Spice Cake

Servings: 15 | Time: 15 minutes active; 40 minutes inactive | Difficulty: Easy



  • 1 cup oatmeal
  • 1 1/4 cups boiling water
  • 1 cup sugar
  • 1 tsp. vanilla
  • 2 eggs
  • 1 1/3 cups flour
  • 1 tsp. nutmeg
  • 1/2 cup shortening
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 2–3 mashed ripe bananas
  • 1 drop cinnamon essential oil


  • 1/2 cup butter, softened
  • 2/3 cup brown sugar
  • 1 cup shredded coconut
  • 1/2 cup chopped walnuts
  • 1/4 cup milk
  • 1 tsp. vanilla


  1. Mix together all cake ingredients.
  2. Pour mixture into a buttered 9″ x 13″ pan.
  3. Bake at 350 degrees F for 35 minutes.
  4. While the cake is baking, mix topping ingredients together.
  5. Spread topping mixture on top of cooked cake.
  6. Broil the topping until just browned.
  7. Enjoy!
