Herbed Parmesan Chicken

Servings: 8 | Time: 30 minutes active; 25–45 minutes inactive | Difficulty: Medium

Ingredients:

  • 4 chicken breasts, cut in half
  • Salt and pepper to taste
  • 1 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tsp. paprika
  • 1 tsp. garlic salt
  • 1 cup flour
  • 2 eggs
  • 1 drop thyme essential oil
  • 1 drop oregano essential oil
  • 2 Tbsp. olive oil

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Sprinkle chicken breast halves on each side with salt and pepper.
  3. Get out three small bowls (big enough to fit a single chicken breast half in).
  4. In the first bowl, combine bread crumbs, Parmesan cheese, paprika, and garlic salt.
  5. In the second bowl, whisk together the eggs and essential oils.
  6. In the third bowl, place the flour.
  7. Line up your bowls of flour, egg, and bread crumbs.
  8. Dredge the chicken in the flour, then dip it in the egg mixture, and then dredge it in the bread crumb mixture (completely coat the chicken breast half with each of these steps). Repeat until all of the chicken breast halves have been covered.
  9. Heat olive oil in a frying pan over medium heat. Once the pan is warm, place the chicken breasts in the pan, and brown them on all sides (you aren’t trying to cook the chicken pieces through with this step; you just want to give them a nice golden color).
  10. Place chicken breast halves in a greased baking dish, and cover tightly with aluminum foil.
  11. Bake for 25–45 minutes or until chicken is cooked through. Note: If your chicken pieces vary in thickness, some may cook faster than others. Use a meat thermometer to test for doneness, and remove chicken pieces from the oven as they reach an internal temperature of 165 degrees Fahrenheit. Chicken will be the most moist if you don’t overcook it.
  12. Serve Parmesan chicken with your choice of noodles and marina sauce (see below for a great marinara sauce recipe using essential oils).

  • 1 drop oregano essential oil
